Coco Movie Night Menu

Welcome to my crazy adventure of trying to watch every Disney animated classic movie and every Pixar movie! I have been slowly making menus for each movie and finally started watching them. Coco is a movie I have been dying to watch, since somehow I never saw it! The Coco Movie Night menu also was pretty easy to come up with and incredibly delicious to make.

As I watch each of these movies, we have been making a drink, dinner, and dessert that is inspired by the movie. Whether it is something directly from the movie, inspired by the culture or setting of the movie, or if there is something in the Disney Parks that fits!

Coco was extremely easy to come up with a menu for because it is so heavily influenced by Mexican culture. We decided the best menu would be margaritas, tacos, and churros!

Drink – Pineapple Margarita

You can do whatever type of margarita you like. Personally, I make the classic one and a blood orange one pretty frequently, so I wanted to switch it up! I found this simple recipe from The Toasty Kitchen and it was delicious!

  • 3 ounces pineapple juice
  • 1 ounce lime juice
  • 1 ½ ounces tequila
  • ¾ ounce triple sec
  • 1 teaspoon simple syrup

Appetizer – Chips and Salsa

I won’t be doing an appetizer or side with every Disney meal (which is why it’s listed under dinner on this menu). However, how could you pass up the opportunity to make fresh pico de gallo for Coco? You can also swap this out for guacamole if you prefer, but personally I just love pico so much.

We didn’t actually use a recipe for this one, but I’ve used this one before and loved it! Oh Sweet Basil has a great and simple recipe for pico de gallo. The ingredients to make pico de gallo are:

  • 4 Tomatoes Chopped
  • Jalapeno Seeded and minced
  • 2 Limes Juiced
  • 1-2 Cloves Garlic Minced
  • 1 Teaspoon Kosher Salt
  • 1/2 Red Onion Minced
  • 1/2 Cup Cilantro Minced
  • 1 Pinch Pepper

They also have a great recipe for guacamole as well if that is more your speed!

Dinner – Cilantro and Lime Chicken Tacos

Similar to the margaritas, you can make whatever type of tacos you want! I was in the mood for something light but refreshing and this recipe from Fresh Off the Grid was perfect. We topped the tacos with salsa and cheese, I mean duh. Everything is better topped with cheese right? Ingredient list of the tacos are:

  • 4 boneless skinless chicken thighsabout 1 lb
  • 2 tablespoons chopped cilantro
  • 2 limesjuice + zest
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon ground coriander
  • 1 tablespoon oil

The recipe didn’t call for it, but we added salsa as well.

Dessert – Churros

Honestly, any excuse to make a Disney Parks churro, right? Churros seemed like the perfect dessert for Coco movie night. Do yourself a favor and buy the Unofficial Disney Parks Cookbook. This book is one of the greatest gifts you can get for a Disney fan. There is also an Unofficial Disney Drink Recipe Book too!

Back to the churros. They were a lot easier to make than I thought, but as you can see from my attempt, they definitely weren’t as pretty as you would find in the parks. However, they still tasted amazing! One thing I would change is that I would have vanilla ice cream on hand. The churros were really sweet and the ice cream helped to cut the sweetness. Plus the pairing of the two was delicious.

The ingredients you will need for churros are:

  • 1 cup room-temperature water
  • 3 tablespoons plus 1/2 cup granulated sugar, divided 
  • 1/2 teaspoon salt
  • 3 tablespoons plus 4 cups vegetable oil, divided
  • 1 cup all-puporse flour
  • 1 teaspoon ground cinnamon

Overall the dinner was simple and delicious! I’m looking forward to doing more Disney movie nights. Food and Disney? Sign me up.
